In Laguiole, in the Aveyron, is the restaurant of Michel Bras, one of the greatest French chefs. Deeply attached to his land, the Aubrac, this chef uses the landscapes, shapes and colours of his native region as a source of inspiration. As he delivers his recipes, similarities appear between his dishes and nature, namely the great green plateaux of Aubrac. Michel Bras becomes a poet, painter and musician when he talks about his cooking and his work. Innovative, it resembles a laboratory with all the herbs present and the culinary experiments that are done there, but it always keeps a strong connection with the terroir. Each plate conveys a strong emotion like the freshness of a meadow or a childhood memory.
